Beans and rice challenge

We eat a lot of beans and rice here. It is healthy, frugal and meets the dietary needs pretty well. But I am running out of new ways to cook them, and boredom in food is one rut I don't want us to get into. I am putting out a challenge to my readers to share your recipes with me! I would love to find some new ones to add to my binder! Could you all help me out?

I did do well at the store today with my coupons, and I got the cats several bags of kitty treats (only get those when I get them free). I stocked up on cheap butter and some ramen noodle type snack for the kids (got those free as well). And I did get some chicken breasts marked down. I try to use my meat sparingly these days, it really adds to the cost of the meal. I have found that just a little bit of chicken with some rice and veggies goes a long way!

Forgivness is tough sometimes

I am having a real struggle right now. I have someone I need to forgive for something. I know I need to set my heart free and forgive but I just can't seem to in this situation. I have prayed about it, and I know it isn't God stopping me, it is me doing it, but I just can't seem to let go. That fact is weighing heavy on my heart. I just am stuck in a rut on this and can't seem to find my way out. I could sure use some prayers from my readers in this situation. I would also take any suggestions from those of you who have gone through it with ways I can open my heart.

Another struggle I have right now is that I have a Christmas party to go to in December. They have themed the party "hoedown" and want everyone to dress in cowboy/cowgirl attire. I guess I will just go as I am, as I doubt I will find a modest cowgirl dress to fit my modest way of dressing. And I am struggling about wearing my head covering that night. I am not sure why really, I never go anywhere without it, but I feel so judged by some of these people. Another matter for me to pray about I guess. I sure have a heavy heart today.

The church food outreach was busy today

Since my wonderful beloved asked for that for dinner. It is a chilly rainy night, so I guess a good night for it. I just need to decide what is for tomorrow. Sundays are always so busy with church and such. I need to look, if I have what I need I may make a taco soup. That usually goes over pretty well.

I helped at the church food outreach today. It was really nice to get to know some of the other church ladies better. We went from nearly full shelves to almost empty, in fact we did run out of some things. But the other ladies said it is always a miracle to come in next month and see all the shelves full again. They likened it to Jesus feeding the people and multiplying the food and said that God does that to our outreach. We did have a couple extra gallons of milk, and some extra sliced cheese. Sadly we ran out of eggs, bread, hot dogs, canned veggies, butter, pancake mix, cereal and several other things. But no one from our village had anything left out, and even the people from other towns around here didn't get turned away with nothing. And we know that they also have other places they can go. Sadly some of those from other towns are the ones with the most children, so we figure they come to our outreach because they just really don't have enough. We do what we can for everyone and try not to turn anyone away. We were prepared for 60 this month, and next month will prepare for more. It is so sad to know that so many are in need, but on the other hand so wonderful to be involved in helping. Pastor says he isn't sure how, but the church has always been able to fill that need and when they just are not sure how, it manages to happen somehow anyway, the money to keep it running comes in. God really is an awesome God. I know that with my coupons when I can get free soap and toothpaste and toothbrushes, I donate that. Normally we don't have a lot of those things for the outreach just what people can donate, but those that receive it are always happy and I feel blessed anytime I can help with those things. We don't have much money right now either, but I do have coupons!

Beloved and I will officially become members of this church tomorrow. It is so wonderful to find a church where we really feel like family. I feel very proud to call the people there my brothers and sisters in Christ, and proud to be able to say I am a member of that church!

We are home from Iowa

It was a tiring trip to do in three days. Two ten hour days of driving, with Beloved having a six hour interview on the middle day. Longest interview he has ever had. This morning on the drive home, he got a call about an interview in Colorado next week, but he will likely fly to that one. And he got an email about one here in Ohio. So hopefully something will pan out this go around. Seems it is feast or famine as far as the calls go. Either they all call at once, or nobody calls at all. I just hope that something pans out soon. I have no doubt that we will end up where God wants us to be, we always do but that time in the middle of not knowing where that will be is scary times! All in all it was a safe uneventful trip, and that is always a good thing. And as always, it is wonderful to be home and we look forward to sleeping in our own bed tonight.

I was baptized today

Today I was baptized. As I posted before, I was sprinkled when I was a teenager, but it has been weighing on my mind heavily that the Bible does not mention it as a way of baptism. So today I was dunked. I feel much better now that I know it is done in the way the Bible asks it be done.

We are taking a trip

To Iowa next week where Beloved has a job interview. They were going to fly him, but he asked them to rent a car and such and they were happy to do so. A nice chance for us to get away for a bit. We are taking Erica with us this time, we thought about leaving her home with her brother but Beloved really felt pulled to take her.
The Hotel we are staying at has a pool, so I know she will enjoy that. Please keep us in your prayers that we will end up in the right place for us with the right job for beloved.

Baptism decision

Well, I have made a decision about Baptism. I need it redone and am going to get it done again. Or should I say I am going to do it. When I had it done years ago, I was sprinkled. I have now come to believe after research and talking to my current pastor, that sprinkling is not the way to go. In fact, I am not sure I was ever truly "Baptized" that way. I have looked high and low and it is as Pastor said, the Bible never says anything about being sprinkled. Every example I have hunted down show it as a submersion. I am not sure yet when I am getting it done, but I am! It has taken me a few weeks to come to this decision and I feel very good having finally made it.

A very saving day at the grocery store

I went to the grocery store today to pick up a couple of things and happened to get there just as the guy was marking down the refrigerated crescent rolls! And cheap as well. And then, I noticed the coupon machine right there making them free! Since I needed to either make or buy bread I was thrilled as I bought every one of them. I didn't have to buy bread and depending on how meals go, may not have to make any for a few days! I do so love free! It helps so much with the tight budget. Erica is taking pigs in a blanket to school tomorrow now, She loves them. Just crescent rolls wrapped around hot dogs and baked, but they sure make her happy. I am getting some apples Saturday in my Angel Food order, I am thinking I might make some apple dumplings with some of them.

Erica has been helping me make the candles for our Christmas gifts, we will probably spend awhile working on them Friday since she is off of school. She is having a great time helping, and at 11, she is the perfect age to get in on some of these things and do the learning. So much fun! She sewed together some of the dryer sachets tonight since it was to cold and wet for her to play outside any and she really enjoyed that as well. She doesn't like long drawn out projects, because she still bores of them easily so little sewing projects are great for her.

My Christmas gifts

I took a pic of the dryer sachets I am doing. This was a first one (the pink item) and a practice run I am keeping for me. Very inexpensive. Leftover material for the outer part of the "pillow" and an old towel that was beyond thin (yes even with holes) cut into squares and put two squares thick in the middle with a couple drops of essential oils. Now I can still use vinegar as fabric softener and have smell goods when I use the dryer that isn't often. The dishcloths I hope to have a bunch of done as well for Christmas. I am going tomorrow to pick up the baby food jars I picked up off of free cycle to put in the bath salts I am going to make! I am enjoying all this so much.


I got my essential oils

I got them and the company I ordered from although the shipping and handling was somewhat high, they sent me three free samples (and the samples are the same size of the bottles I ordered). I have sent out a request on free cycle and I think I am going to be picking up some baby food jars tomorrow to put my bath salts in! I also found another idea online I will be using to make some Christmas gifts. It is a "dryer sachet" you sew a little pillow and put some fragrance oil on it and use it in the dryer kinda like a dryer sheet. When it quits being a good fragrance you just put on a couple more drops of oil! Sounds like an awesome idea to add some fragrance for someone who like me who 1. doesn't use the dryer all that much and 2. uses vinegar as fabric softener. This just adds a nice scent.

I put in on free cycle for some candle making supplies, I was hoping to get them and try my hand at candle making, but it wasn't meant to be they were gifted to someone else. But it is something I will keep in mind to try at some point. I may do it for Christmas just depends on how time and finances go as I don't know what it will cost to get supplies for it. They would make a nice addition to the dish cloths I am crocheting and the bath salts I am making. I am dreaming of very nice and cheap handmade gift baskets this year! If you have any other ideas I would love to hear them! And if you have done candles and have any pointers for me I would love those as well!

I have been thinking about this skill a lot with the current economy. I would love to find some people to barter with. But noone seems to do it anymore. So where do you start? There are online sites to do it at. Not sure if they are worth a shot or not. Wouldn't it be great to take skills we have and be able to trade them for things we need? I would love to be able to trade for farm fresh eggs! Just wondering if anyone has made a go of bartering? If so where and how did you start?

Herbal remedies

I am desperate for some sinus and allergy help and have finally decided it is time to try some herbal remedies. So far I have found that vitamins A and C may help along with Apple Cider Vinegar (ACV) pills. And stinging nettle. I am on my way today to try to get these items. Also suggested is local bee pollen, and I can get bee pollen, but I am not sure I can get the local bee pollen. That is going to take some research. Anyone had experience with these things?

I ordered essential oils today

To use to make bath salts for Christmas gifts. I am hoping to make most of my gifts this year. I would like to find a fairly cheap magazine to set my daughter up for for Christmas. This year she is getting Jack and Jill, I don't have a lot to spend but she does enjoy getting them. Guess it is time for me to google around and find something. Something Christian would be awesome.

I also have an order coming for winter. I have two cans for dehydrated potatoes, a can of dehydrated strawberries, and a can of dried eggs coming. I am wanting to add these items to the stockpile. I also have an order for dehydrated refried beans in. I hope I enjoy using all these items. I figure the strawberries will be yummy in oatmeal this winter.

New favorite white bread recipe

I have found a new favorite white bread recipe that I have fallen in love with. The crumb is wonderful, as I use it for sandwiches and toast! I have changed it a bit, I use three packets of yeast (far cheaper for me when they hit sale with coupons) and I don't care for the bread that bread flour makes so I use All Purpose. I have not tried it yet with wheat, but I am sure I will. I have made it several times, and the family is all over it. LINK

I have also been playing around with a rice recipe that the family really loves, but am not sure how I will be making it in the winter, as I add some things from my garden to it. It may end up being only a summer dish. That will be sad! But during the winter the bell peppers, jalapeno peppers and cherry tomatoes are just to costly to consider. But cooked in the rice with some chicken bouillon, it is a real treat!

On the table tonight was beans and cornbread. Nothing fancy, just frugal fare around here. I am thinking maybe some stew tomorrow we shall see.

So I am coming along nicely with my crochet

And my quality is good enough I am now done making for home use and am making for gifts! It is nice to have something to do with myself in the little downtime I have because I never can just sit still. This helps a lot. In fact, I have had several people tell me they love them and can't get them anymore so I am wondering if I should make some to sell. I wouldn't make a lot off of them, but every little bit counts right? I don't know I am still thinking about it. I will post some pics of some of them soon!

Tonight I am going to make cinnamon rolls to take to church tomorrow. We have breakfast fellowship on Sunday mornings where the church provides coffee, dougnuts and such, and sometimes I take in cinnamon rolls, and they go fast lol. So I think I am going to do this yet again tomorrow. Some weekends I just don't have time to get them made up. Tonight, I am making goulash for dinner.
